The scarlett 2i2 is probably the weakest point in my signal chain. What's the best interface around $300-600? The apollo twin duo? I'm using guitar amps with a reactive load and two studio monitors at the moment. I'm also really just messing around at home so I don't need anything too crazy. Also, does it make sense to get a powered speaker, like the alto 212 or headrush frfr? I'm mainly going for a in-the-room 4x12 sound at low volumes cause I'm in an apartment. I'm using jbl 305s and they sound fine but I'm just wondering if a powered speaker would get me closer to that real cab in the room type of feel but at lower apartment volumes.

A bigger speaker ran at the same volume you run your monitors should give you a bit more low end punch at least, which can help feel.
Yes, Apollo and Audient are leading the mid tier it seems
