Even though he's my personal hero, I'm not going to mention Nobuo Uematsu as he will get plenty of suggestions here.

The composing team for Shadow Hearts (Yo....aka Hirota, Yasunori Mitsuda & co) are brilliant, stunning OST for the second instalment especially.

I don't know what it is about Japanese composers but they can sure write a good video game soundtrack.

Yeah pretty much the music from the original Street Fighter II, and the music from Ocarina of Time and Majora's Mask. Very cool stuff and well written!

as far as just playing through the game and loving the music, i have several. OST's always have tons of filler and crap in them that ruin the flow. i usually trim out the fat when i get them.
