Really, a 7 isn't much different than a six when we're talking the differences between a 1x12 and a 2x12/4x12 - a larger (especially a largr closed back) cab will provide more "thunk" to your tone, while a smaller open-back cab won't be as bassy, but will be rounder.
For playing in your bedroom, a 1x12 is fine. Hell, for recording, the more restrained low end might not be bad either, to keep things tight and leave room for a bass. Really, it comes down to preference, and if you want maximum depth and chunk, a closed back cab of some sort is the way to go, which generally means a 2x12 or larger. (I will say my Nomad 2x12 3/4 back hooked up to my old Recto 2x12 cab was a thing of beauty, with the extra treble openness coupled with the deeper chunk... )

Thanks everybody. I'm relaxed now. The V16 is a sweet little amp even though I'm not really a vintage kind of player but I wanted a small tube amp and it's what I went with. The hasserl mods did a lot for it, especially the raw control he adds which pumps up the gain (at the expense of dialing out some or all of the tone stack) and modding the stock volume to a post phase inverter master volume, but it's still more vintage than I would have preferred. Fortunately that can be dealt with so overall I'm happy with it... for now.

I have a small vox cambridge 15 watt amp, and it sounds perfect with the sevenstring, just add a multieffect box in front of it.
