I'd go with either a Seymour Duncan '59-7 or maybe a DiMarzio PAF-7.

I'm not real familiar with those Gibsons but they're voiced to be vintage PAF. A Duncan 59 model would be a good place to start. Also a DiMarzio PAF might work for you, but it has a ceramic magnet not an Alnico one so it might not sound exactly the same. Also since you;re in Europe look into Bare Knuckles they might a bunch of PAF type pickups and will make all of them in seven string versions.

It should be able to. I think all the Duncan seven string pickups have four conductor cable on them so you can split them.

The 59'7 has 4 conductor cables, you can definitely split it. I have it and it sounds perfect for the Gibson neck pick-up tone you're aiming for.
