Actually, one thing is that I think 7's tend to have more resonance overall when compared to 6's, with bolt ons, as there is more surface area between the neck and the body, as well as more mass in the neck overall.
As far as tonality goes, other than that, not much difference to be honest! A 7 can do all the 6 string stuff, and sound like one, but with more options! |

6 strings=range that is standard or transposed.
7 strings=extended range, above & beyond that only available on a six. That's why I went to the 7. I prefer having the additional range available.
