Low output pups are much more dynamically responsive. You'll notice the sonal difference between picking lightly and picking heavily much more on low output pups then high ouput. Also the resonant frequency range is higher.

The frequency response is different, just like using a different gauge wire affects the frequency response too. I (and I think the OP too) just don't have a good mental image of what that does to the sound.
