Rio Grande are kind of the default choice because they are about the only maker who puts seven string single coil pickups in their regular product line.
Since you're in Wurope though you might look into something like Bare Knuckles.

seymour duncan will make a 7-string version of pretty much anything, i´m told... also, i´d say check out smaller companies aswell, like Eric said, Bare Knuckles... contact them about it, and they´ll get you exactly what you need, but it´ll cost you a nice load of money, but it´s really worth it...
but yeah, look around, and see what you can find from smaller manufacturers...

Contact Bareknuckle, but if it's stratty texas tone you are after, then go look at rio grande pickups, as they pretty much are a strat replacement pickup company, and hence I'd hazard a guess that they'll be more in tune with what you'd want a strat pickup to sound like, plus they offer a few models, so unless you go bareknuckle (which will be awesome pickups) then I'd do this, as seymour duncan will make you a 7 single, but it'll be customshop prices, which are probably the same as bareknuckle charges anyway!
