Favorite last-minute dinner success

Eating some left-over chicken breast for breakfast, thought I'd ask you guys to post up some of your favorite last-minute made up recipes. Not talking about any Food Network recipes here, just those situations like I had last night when I wanted to cook but didn't plan ahead. Ended up just throwing together salt pepper garlic and sage on the breast and cooking it in a saute pan with butter (unsalted of course) and olive oil. Super easy and tasty.

Other last minute favorites have chicken breast stuffed with zucchini and goat cheese and braised asparagus with shallot & sherry sauce, and sweet potato fries with basil salt

I guess I will say that an alfredo sauce with some rosemary is surprisingly good.

Ingredients:

Spinach and Asiago Cheese Sausages
Garlic
Onion
Hungarian Hot peppers
Penne Noodles
Pine Nuts
Olive oil

Boil the noodles. Cut everything up small (I tend to do rings with the peppers) and add in to a LARGE pan. Use however much of each ingredient you want according to taste. Start cooking that while the pasta is boiling. When the pasta is boiled, drain and add to the rest of the meal with a little olive oil.

I'm not sure I explained that well, but it evolved from needing to get rid of a lot of left-over sausages.

-1 box of angel hair spaghetti
-1 can of Gold Star Cincinnati Style Chili
-1 pot of boiling water with about a cap full of vegetable oil added
-1 small pot to heat Chili
-1 bag if cheddar cheese
-1 bottle of Frank's Red Hot sauce
-1 sleeve of saltine crackers

Add spaghetti to boiling water. Let boil until noodles are thoroughly cooked. Heat chili in small pot. Drain water from spaghetti. Pour chili over top. Cover with cheese. Crush crackers on top. Douse in hot sauce. Enjoy!

I've taken left over chicken, cut it up into cubes, cook with some mixed stir fry mixed vegies and added some McCormic fajita mix, and had some almost instant fajitas! Or if you don't have tortillas (like I did) some minute rice and you're set!

My Jamaican curry, which is probably complcated by a lot of you guys' standards (and I won't spiel the recipie out here), is prolly my favorite quick yet excellent dish. Done right, it's positively awesome eats.
