I've been eating bison burgers for a while now and love them. Actually, to tell you the truth I think they taste better than regular beef! Not to mention the added health benefits of far less fat and cholesterol. I have this guy at work who eats nothing but fast food, I mean fucking burgers and chicken tenders from BK or MacDonalds all the time. He's such an unhealthy eater he thinks a burger from a deli isn't considered fast food. Anyhow, I kept telling him about buffalo burgers and he originally was like, "I won't eat that shit. I like cow" but after enough time I got him curious. I took him to the Heartland Brewery just last week so he can try his first bison burger. While waiting he remarked at the fork and knife that they always set down that he hasn't used a fork in months, he eats all hand foods. Anyhow, he really liked the burger and admitted he couldn't really tell a difference. Bison burgers kick ass

We use a lot of ground bison when cooking - I love making chili with it and turkey sausage. Bison steaks are excellent, too.

Agreed. I'd use it more, but I haven't found a good local source for bison. It's a great alternative to beef - subtly different flavor, and potentially more healthy too (though that depends largely on what cuts you're talking).
I should check out the local whole foods again, actually, I'd be surprised if they didn't have at least a certain amount of bison. I wouldn't eat it exclusively over beef, but that's just because I dig the variety. ![]()
