GF/CF Diet...
Anyone here have any experience with the Gluten Free/Casein Free diet? I'm getting tested for celiac disease next week and they say it's the only way to treat the condition. Not to mention the fact that it will lessen some of the more extreme symptoms of my Asperger's Syndrome, at least from what I have heard.
I'd love to hear from anyone who knows about this. "Dude, you need to find the right fucking meds to be on, because you are the most unstable person I know." |

Yes, this is a bump, but I thought I'd mention that I've lost 9 pounds since I started this GF diet, and that was the day I first posted the thread.
Blood was drawn this morning to run a full celiac panel. We'll see what happens. If I have the disease then I am already on the path to recovery since I know how to treat it! Yay!Sorry, giddy like a school girl... |

I have to avoid gluten for the rest of my life. That means anything with wheat, barley, rye, oats, and such. So no pasta, no bread, no fillers, no... *sniff!* pizza! Unless of course I find recipes that I can prepare with gluten free ingredients. The sucky thing is that gluten is used as a staple ingredient in flavorings, fillers in foods, medicines, etc, and is not generally reported on product ingredient lists since it is not thought of to have any impace on the nutritional value of the product. Case in point, half of the meds I was taking to counteract the acid reflux attacks I've been suffering with are packed full of gluten. The meds were making me worse!!!
Celiac disease breaks down the villi in the intestines and causes the body to eventually kill itself by not providing your organs the nutrition they need. It is not considered a gluten allergy even though gluten is the catalyst for the immune system breakdown. It generally leads to cancer. The symptom list is very long, so doctors often misdiagnose it as something else and treat only the symptoms. They say it can cause you to become lactose intolerant since the villi no longer can break it down, so people think that all they have to do is pop some Lactaid and go about their business. I wouldn't go so far as to say that the GF/CF diet is for everyone if they want to lose weight. In my case the disease has caused me to not digest my intake properly, my metabolism being effectively dead, and all carbs get converted to stored fat immediately since my body thinks it is starving. Get rid of the gluten, get rid of the effect of the disease, so in one week I've already been able to start digesting food and burning stored fat. They say that the intestines will repair themselves as long as I stay 100% gluten free, forever, no cheating, period. ugh Positives though, most soft drinks and cookieless candy bars are gluten free. It's almost hilarious to me that I can go to the snack machine and get some Doritos, a Butterfinger bar, and a Mountain Dew, and be fine, but if I go to Subway and order a roasted chicken sandwich on whole wheat bread with light mayo, I will be blowing chunks all night long! |

My wife has Celiac disease. She was diagnosed with this a couple years ago and has been on a no wheat/gluten diet ever since. I can't say I envy her. No beer, bread, pizza.... you name it. Anything with flour basically. I feel bad for her when I'm drinking a beer and having a piece of pizza in front of her. She needs to be very careful when we go out for dinner because you just never know if the food has been in contact with anything that will make her sick. So far she's been pretty lucky. She's had a couple incidents that have made her sick, but over all it's not been too bad. A lot of chain style restaurants now offer gluten free menus which has helped. Let me know if you have any specific questions. I'm sure she would be able to answer them a lot betten that I would. |

so, i'd imagine it'd also be good for us regular folks to cut down on our gluten intake? or, at least keep it in balance with other things? or cut it entirely?
