My wife eats a lot of rice and rice based foods as well normal things like chicken, beef and vegetables. I think the thing she misses the most is bread. They have gluten free bread, but it tastes awful.

My wife has Celiac disease. She was diagnosed with this a couple years ago and has been on a no wheat/gluten diet ever since. I can't say I envy her. No beer, bread, pizza.... you name it. She needs to be very careful when we go out for dinner because you just never know if the food has been in contact with anything that will make her sick. So far she's been pretty lucky. She's had a couple incidents that have made her sick, but over all it's not been too bad.

A lot of chain style restaurants now offer gluten free menus which has helped.

Thanks man! I appreciate the offer! I will definitely ask questions as they arise. We've done a lot of research so we've learned a lot already, but there are always details that elude us, like what Chris is asking...! We're eating a lot of rice and beans and veggies right now and have come up with some decent meals so for the moment I don't miss the other stuff. Also, since we took our 11 month old off of gluten he's been acting a lot happier and is generally a calmer kid.

Update: So far I've been gluten free for 19 days and have lost 14 pounds. I have not had a single acid attack since I started and they were are frequent as once every other day before I began. My joints don't hurt like they used to, my energy levels are sky high, and oddly enough I feel like my senses are a little more acute. I'm also in a much better disposition emotionally. Not to be crude or anything, but things are far better in bed as well.

I get my blood work results on Wednesday, so here's hoping for positive on Celiac Disease so I can finally put a name on this thing that has plagued me for so long!
