Norah Jones, Peter Malick Group, Aphex Twin, Lisa Loeb, Switchfoot (kinda guitar-y still :s), Something of a Silhouette, Mono/Bossk and other ambinet stuff etc., Coldplay, and I'm a huge fan of Jamiroquai.

Phil Keaggy. He's so talented and his music is so interesting to listen to. Especially his live acoustic looping stuff.

Umm, best non-metal non-rock, guitar music is gypsy jazz, by far-> Django Reinhardt, Jimmy Rosenberg, etc.

Also like modern guitar jazz, such as Allan Holdsworth, Al Di Meola (although he is rocky/metaly), etc.
