Anything Marty Friedman especially Tornado of Souls and Killing Road
No More Tears- Zakk Wylde
S.A.T.O.- Randy Rhoads
Diary of a Madman- Randy Rhoads, although it's not difficult to play, it's just so badass and heavy.
Catch The Rainbow- Ritchie Blackmore, even though the song, esepecially the begining of the solo, completely rips off Little Wing by Jimi hendrix, it's played so beautifully.

Sails of Charon- Uli Jon Roth- intro solo is pretty fuckin sick

the end of White Walls, Between the Buried and Me album Colors, althoug there is a lot of juicy solo's and leads on that album

Steve Vai's "Silent Within" has a mental solo, as do "Freak show excess", "The Blood and Tears" and his solo Devin Townsend's "Triumph".

Shawn Lane has tons of amazing solos, but his greatest moment was in Jonas Hellborg's "Temporal analogues of Paradise", in the first movement, starting about 13 minutes in and ending at about the 18 minute mark. Shawn just sounds so perfect, his playing is so ridiculously fast and clean, and he sounds so gleeful and triumphant. This solo is he closest I've ever heard someone come to "God mode" in his playing.
