Esp Griffyn is a jewel in the rough
Steve Vai's "Silent Within" has a mental solo, as do "Freak show excess", "The Blood and Tears" and his solo Devin Townsend's "Triumph".

Shawn Lane has tons of amazing solos, but his greatest moment was in Jonas Hellborg's "Temporal analogues of Paradise", in the first movement, starting about 13 minutes in and ending at about the 18 minute mark. Shawn just sounds so perfect, his playing is so ridiculously fast and clean, and he sounds so gleeful and triumphant. This solo is he closest I've ever heard someone come to "God mode" in his playing.
