yes, you can do this. a couple issues:
removing the tone control will sound slightly different from having it turned all the way up. even with it cranked, it still bleeds some high end. you can remove the tone but still make it sound exactly like it did with the tone cranked by wiring in a resistor and capacitor that have the same values as the pot and cap on your tone control. it's basically a hard-wired tone control that can't be adjusted. most tone pots are 500 kohms resistance and most tone caps are .022 microFarad, but you should check yours to be sure. or just try things with no tone control at all and see if you like it.
you can put a mini-toggle in that tone-pot hole, but mini-toggles usually go in smaller holes, 1/8", than pots, 5/16" or 3/8". if you get washers that are wide enough to span the larger tone-pot hole, you can tighten the mini-toggle down and it'll be fine. you could also look in an electronics store for a non-mini toggle, a bigger one that might fit the hole more perfectly.
yes, that AllParts on/on DPDT switch will do coil cuts. it will also do series/parallel, but not with the same wiring as for a coil cut. if you want a 3-position switch that will do series/coil cut/parallel, get an on/on/on DPDT switch.
