First off it looks amazing and I love the satin type finish you have got going there. If it were mine I'd leave it.

Are you using a high gloss product or a satin finish? Are you using rapid hardener and reducer or slow? What was the temperature when you sprayed it?

To get the glossy finish you will only need 2-3 good coats depending on how thick you spray it on, if you spray it correctly with the correct hardener and reducer for you climate it should be glossy off the gun. To get that perfect flat finish and remove imperfections after it has fully cured you should sand buff and polish as mentioned above. Once you have some experience painting you will be able to get something small like a guitar close to if not perfect off the gun.
