I don't need a floyd rose. If I really need whammy for the 7, i'll get a whammy pedal. I'm more interested in getting good clean sounds on it. String thru body would sound warmer.
What I'm hearing is kind of swing style walking bass and chords plus straight 16th shred/bebop solos. I think this would be cool and I want to play that.

To be honest for piezos you're going to want a full frequency amp or a pa, not a guitar amp. Guys that are known for using piezos in the rock world, like Petrucci, run their piezo output to the PA.
As for ESP/LTD, the only seven string guitars they currently make are the Stephen Carpenter sigs and the Viper. Now there are used M and H series guitars from ESP/LTD... but I think the expensive high-end Carpenters are the only ones with Ebony boards.
