Not a band, but John Coltrane changed his style every record, and particularly around the shift from Atlantic to Impulse! when he went from 'musical' exploration (giant steps etc.) to 'spiritual' exploration.
Faith No More changed a lot. They covered everything from jam band to poppy metal to some sort of weird proto hardcore. And a whole load of stuff in between.
Beastie Boys also did a fuck load of styles. Started out as a straight up hardcore band, then rap-rocky type stuff, straight hip hop, funk, their own hip hop, 'jazzy' stuff etc. etc. but they always have an immediately identifiable groove to their sound (perhaps Mario Whats his name Jr?) which is what makes them kick ass.
