| Yeah, assuming the same woods, hardware, body shape, pickups (in their 6 and 7-string versions), if you played the same E-major chord (for example) on both, it'd sound pretty similar. In some cases, the 7-string might sound a little warmer because there's more wood in the neck, etc. but not a hugely noticable difference. |
